Tasty Clam Chowder

4 cups chicken broth3 large potatoes, peeled & diced2-3 leeks, chopped1 cup canned corn1/2 cup chopped carrot1 cup canned clams2 cups low fat or skim milk1/4 tsp black pepper1/4 tsp saltchopped parsley for garnish
1. Pour broth into slow cooker. Add potatoes, leeks, corn and carrot.
2. Cover, cook on high 1 hour. Stir. Cook on high another hour.
3. Using a potato masher, mash potatoes coarsely to thicken the soup.
4. Add clams, milk, salt, pepper & parsley.
5. Cover. Cook on high additional 20-40 minutes.
May garnish with crumbled cooked bacdon if desired.
