'Our Favourite Meat Loaf'

Ingredients
2 teaspoons canola oil1/2 cup white mushrooms, finely chopped1 slice onion, finely chopped1 carrot, finely chopped1 celery stalk, finely chopped1 pound extra-lean ground beef1/2 cup quick-cooking (not instant) oats2 large egg whites3 tablespoons ketchup1 tablespoon Worcestershire sauce1/2 teaspoon dried thyme1/4 teaspoon salt1/4 teaspoon black pepper1 teaspoon garlic powder3 tablespoons ketchup
Directions
1) Preheat over to 350F

2) Heat oil in large nonstick skillet over medium heat. Add mushrooms, onion, carrot, and celery; cook, stirring, until onion is softened, about 5 minutes. Transfer to large bowl.

3) Add all remaining ingredients except second portion of ketchup to vegetables in bowl; mix well. Press meat loaf mixture into 4 1/2 x 8 1/2-inch loaf pan.

4) Bake meat loaf 30 minutes. Brush left-over ketchup on top of loaf. Return to oven for another 15-30 minutes. Let stand about 5 minutes before slicing. Cut into 4 slices.
