4 cups Bran Flakes2 cups Bran Buds2 cups Water (boiling)4 cups Buttermilk4 Lg. Eggs1 Stick Butter (melted)1tsp. Vanilla1/2 cup Applesauce (unsweetened)1 cup Stevia in the Raw1 cup Brown sugar (dark)5 cups Whole Wheat Flour4 tsp. Baking Soda1 tsp. Salt
In XLarge mixing bowl pour Bran Flakes and Bran Buds. Boil 2cups water in microwave then pour over cereal. Mix until water is gone.
In separate bowl mix Buttermilk and Eggs while melting Butter in microwave, add melted Butter to the Buttermilk and Eggs then add Vanilla. Pour liquid over cereal and mix well.
Add Applesauce, Stevia and Brown sugar, mix well.
Add in your Flour, Baking soda and Salt. Mix altogether.
Using regular cupcake pans, spray with olive oil and fill about 2/3 full. Bake in oven at 350 degrees for 10-12min.
Store leftover mix in plastic container in the refrigerator for up to 2 weeks, just pull out and bake as few or as many as you want at a time! Enjoy! :)
