Kenda's stuffed bell peppers

Ingredients
1 pound buffalo meat2 red bell peppers1/2 onion, chopped2 cloves garlic, diced1 ear of corn, stripped off cob1.5 cups tomatoes, diced or if cherry cut into halves1.5 cups pre-cooked brown rice1 tbsp chili powder (mild? use much less)1 tsp salt1 tsp pepper
Directions
Pre-cook corn and rice. After chopping the onion and garlic, brown them in the olive oil. Add the meat and cook until browned. Add in spices, corn, rice, tomatoes and warm thoroughly. Split the bell peppers into halves length-wise and spoon in the meat mixture. Cook at 385 for 30 minutes in an uncovered casserole pan.
