Slow cooker Mex Chicken

Ingredients
Chicken Breast, no skin, 2 Bush's, Black Beans, reduced sodium 1 can Drain and rinseYellow Sweet Corn, Canned, 1 small can no salt added, drain and rinse*Diced Tomatoes & Green Chilies (RoTel), 1 canOnions, raw, 1 cup, chopped 1 tbl of Mexican seasoning
Directions
Place everything in a slow cooker. When its done cooking I shred the chicken. I serve over a bed of lettuce. I use a slotted spoon to serve. You can also use it as a filling in a tortilla. For the kids I add cheese and sour cream.

    I make something very much like this (am making it today in fact!) I just put the chicken in the crockpot with the taco seasoning and let it cook. Then I offer the black beans and corn as condiments so everyone can build there own taco or salad. - 8/8/12
