Low Calorie Tofu Cheesecake with Crust

Ingredients
Filling:2 Blocks of Organic Tofu Firm or Extra Firm2 T Vanilla Extract1 t Salt1/4 C Pineapple Juice1/2 C Honey1/2 C Unsweetened Apple Sauce1/2 t Lemon Extract1/2 t Coriander1/8 t Almond ExtractCrust: 3 1/4 C Oats3/4 C Nuts like whole almonds or walnuts3 t Cinnamon4 T Canola or Coconut Oil1/4 to 1/3 C Water2 T Honey
Directions
Preheat over to 350 degrees.
Blend oats and nuts in a food processor. Mix oats, nuts, canola oil, water, 2 TBS honey, and 3 tsp cinnamon together for crust. Mash together in the bottom of pan.
Mash tofu into small crumbles. Mix all ingredients in a mixing bowl including tofu. Beat ingredients together with a mixer until smooth. Put mixture on top of crust in a 9 x 12 baking pan. Bake at 350 degrees for 20 minutes or until outside of cheesecake begins to brown.
