Zucchini, summer squash, onion, cherry tomato and mozzeralla omelet

Ingredients
2 eggs, beaten1/3 cup chopped onion (sweet)1/2 medium baby zucchini1/2 medium summer squash (yellow squash)12 cherry tomatoes2 Tablespoons water1/2 cup shredded mozzeralla4 Tablespoons Chi Chi's medium salsa
Directions
Preheat broiler. Heat skillet at medium heat with olive oil, add onions, chopped zucchini and summer squash.Cover and saute for 2 minutes. Add cherry tomatoes, saute another minute or two. Pour eggs over and reduce heat to low and sprinkle cheese over. Cover and cook for 2 minutes. Remove from heat and remove cover and place under broiler until the eggs are set and the cheese is melted. Serve with salsa.
