1 cup peanut butter1 cup sugar1 egg
Directions
- Mix all ingredients together
- Drop by tablespoons onto a cookie sheet
- Bake at 325 for 8 to 12 minutes

    Absolutely love this recipe and make them frequently! You can sub. homemade PB for store-bought and splenda/truvia for sugar, to cut down on fats and sugar! I also love using almond butter in place of peanut butter and alternating between crunchy and smooth PB! So versatile! - 8/23/12

    The recipe I use has 3 egg whites, instead of a whole egg...so they are more like a meringue. You whip the egg whites to a meringue consistancy, add the sugar...I use Whey Low for the sugar, then gently fold in the peanut butter, bake...they melt in your mouth! - 8/23/12

    Yes it has sugar, but it is a cookie after all. The recipe is not called "Low Sugar PB cookies" it's called "Easy PB cookies." And besides, SparkPeople is about a healthy lifestyle-which includes moderation. Making a dozen cookies & eating 1 won't cancel out the last 100 healthy choices you've made. - 8/23/12

    I've been making this recipe for years! I add in a teaspoon of vanilla as well, just to make them more rich-tasting and not so much like sugary peanut butter. I also bake for just 10 minutes at 350, but will try the lower temp next time I make them! - 8/23/12

    The way some people are commenting you would think this was 1,000 calories or something. GAIN WEIGHT? On one occasional cookie? Really? If anyone has to count their calories that much that they cannot enjoy one tiny simple treat than that's a real shame. I have (GASP) ice cream once a week. - 8/23/12

    For those of us who feel the need to bake goodies now and then, I personally think this is a fabulous healthiER version to try. Yes, it has sugar - so try a substitute instead or lower the sugar content! I love it because it has no flour, has fiber and protein. I will be trying these! - 8/23/12

    I agree with the other ladies.....this recipe is not saying it's super healthy, they are saying it's simple 3 ingredients! it has alot of protein! and with any sweets its all about how many you eat. eating one of these cookies is not going to be horrible, if you dont want to make them then dont! - 8/23/12

    I think everyone is confusing what SP is here for. For one, I've never seen SP proclaim to be all about the healthiest ingredients ALL the time - no organic recipes, etc. But two, it's a cookie! Or even if it's candy, some of us like our sweets still! - 8/23/12

    I love this recipe. It's especially great when you use 1/3c white sugar, 1/3 c brown sugar and 1/3 c powdered sugar. If you need to make a lot of them triple the recipe and use 1c of each sugar. Great for a cookie exchange. I also roll into balls and then in sugar before baking. - 8/23/12

    I think I'll try making these using PB2 and Muscavado Sugar. Lower fat and this sugar take longer to break down in the body so it doesn't spike BG as quickly. However, moderation is still the key! - 8/23/12

    If this cookie can travel well - in a pocket or backpack, then it would be the perfect nutrition for those that run/walk/hike significant mileage and time. Out on the road/trail you need carb, salt and protein replacement. Could be a good alternative to GU. - 8/23/12

    My kids loved these when I made them for an after school snack paired with apple slices. I did make them smaller to stretch the batch--and used a natural PB. Next time I will play around with swapping/reducing the sugar with brown sugar and maybe some honey. Thanks for the recipe!! - 8/23/12

    The recipe I use is equal amts of PB (I use the organic kind with no sugar) and dry milk, that I've used since my kids were little. It's a no-bake, though adding an egg would require baking, and I'll have to try that. It's good with chocolate bits, too, though I prefer the 90% chocolate to frost. - 8/23/12
