Ingredients
4 cups water2-3 bay leaves1 tablespoon butter1 teaspoon Celtic sea salt1 cup yellow cornmeal
Directions
Boil water in kettle and add to pot with bay leaves and salt. Sprinkle the cornmeal into the boiling water while stirring. Turn the heat down low and continue to stir for a few minutes. Leave for 5 minutes then add the butter and beat until creamy. Let sit for 5 - 10 minutes then beat again briefly before spooning/pouring the mix into large muffin tins. Makes 6 large muffin sized portions.
