Hunter Family Corn Meal Mush Bread

2.25 tsp dry yeast.25 cup warm water.5 cup corn meal1.75 c boiling water1.5 tsp salt2 Tbsp Sugar1 Tbsp shortening2.75 to 3 cups whole wheat flour
Soften yeast in warm water. Cook corn meal in boiling water for 10 min; add salt, sugar and shortening. Cool corn meal mixture to lukewarm, stirring occasionally to prevent a film from forming. When cool, add softened yeast and beat well. Add flour and mix well. Knead using as little additional flour as possible. Place into greased bowl and let rise until doubled in bulk. Knead down and let rise again. Shape into loaves, place in greased pans, let rise until almost doubled. Bake at 400 degrees for 10 minutes then reduce to 375 degrees and bake for an additional 35 to 40 minutes. Remove from pan and allow to cool on a wire rack.
