Jalapeno Red Potatoes

Ingredients
About 8-10 medium red potatoes (not baby reds)1 cup olive oil1 cup fresh squeezed lime juice (about 6 limes)4 Fresh Jalapenos whole with stems cut off(seeded for less kick)Salt & Pepper to taste.
Directions
In a blender puree together the olive oil, 4 whole fresh jalapenos (or seeded ones for less kick) and 1 cup fresh squeezed lime juice until most of the jalapenos are chopped finely.

Clean & Quarter the potatoes, leaving skin on (8-10 depending on size).

Place potatoes in pan, cover with the blended mixture, bring to a boil and simmer about 30 minutes until potatoes are tender without falling apart. The mixture will not cover the potatoes, so stir occassionally.

Remove from heat and keep in a ceramic hot pot for serving, or serve right away.

Serving Size: Makes about 1 large potato per 8 people

    I haven't tried this yet but I am going to at the beginning of the month. It looks DElICIOUS! I'm not real worried about what the calorie count says because you don't use all the oil and also since it is a side, I might just have a smaller portion. - 8/14/12
