Baked Summer Squash

Ingredients
Spray small casserole dish with non-stick spray.1 c thinly sliced zucchini1 c thinly sliced summer squash1 c thinly sliced Patty pan squash1 c thinly sliced sweet onion1 large tomato, sliced thin1 tsp minced garlic1 oz Asiago cheese, shredded or grated2 T grated Parmesan cheeseSalt and Pepper to tasteFresh italian herbs to taste (oregano, basil, etc..)
Directions
layer bottom of dish with one type of squash, then 1/3 onion, 1/3 tomato. Season with spices and top with sprinkle of minced garlic. Repeat these layers two more times with remaining squash. Top with cheeses. Bake at 350F for 45 minutes. reheats easily. Serves 4 generous portions
