Paleo Salmon Cakes

Ingredients
15 oz canned salmon (without the hunks of skin and bones)2 large eggs2 tbsp coconut flour1 tbsp lime juicedash of salt1/2 tsp pepper
Directions
Mash salmon in a bowl with a fork.
Mix with remaining ingredients.
Form into 4 patties.
Cook in pan sprayed with non-stick spray for 3-5 minutes per side.

    Delicious! The coconut flour really soaked up the cooking fat and I had to keep adding oil to the pan. Nonstick spray didn't work at all for me. Otherwise I would give it 5 stars. Next time I'll use almond flour. My husband asked for more and we've already made 4 cans worth of cakes! - 2/22/13
