Baked Parmesan & Zucchini Bites

2 Zucchini, medium, cut into 1/4 inch slices1/2 cup Bread crumbs, plain 2 Tbsp. Grated parmesan cheese1/8 tsp. Black pepper2 Eggs, (whites only)Dash of your favorite seasoning to tastePam Cooking Spray
Preheat the oven to 475 F.
Coat cookie sheet with Pam Cooking Spray.
Blend bread crumbs, parmesan cheese, and black pepper. Add a dash of your other seasonings now to taste. (ex. oregano, garlic, basil, etc.)
Place egg whites in a separate bowl.
Dip zucchini slices into egg whites, coat with bread crumb blend and place on cookie sheet.
Bake for 5 minutes, flip and bake for an additional 10 minutes until browned. Oven baking times may vary.
Makes 4-5 servings. Nutritional information based on 5 servings.
Note: I do one egg white at a time as the bread crumb mixture tends to start clump toward the end. Using one at a time gives me a cleaner mixture to dip in.
