Low Calorie Crustless Spinach, Mushroom and Swiss Quiche with Turkey Bacon

2 cups thawed frozen spinach1 cup sliced mushrooms1/2 cup chopped onion3 eggs1/2 package turkey bacon4 oz shredded swiss cheese1/2 cup fat free skim milksalt and pepper to taste
1. Preheat the oven to 375�F. Cook bacon on a foil lined pan in the oven to desired crispness.
2. Heat a medium-sized, non-stick skillet over medium-high heat. Coat with cooking spray, and cook the onions and mushrooms 3-4 minutes. Add the spinach, and cook about 5 more minutes.
3. Chop the bacon
4. In a large bowl, whisk together the eggs, cheese, milk, salt, and pepper. Add the spinach mixture and bacon.
4. Pour the egg mixture into a 9 inch pie plate sprayed with non stick cooking spray.
5. Bake 35-40 minutes, or until the eggs are set and the top is golden brown.
