Green Apple Salsa

2 Granny Smith apples, peeled, cored, and diced fine1 red onion, diced fine1 Anaheim pepper, seeded and membrane removed, diced very fine3 ounces cilantro, minced3 ounces honey1 lemon1 lime
Juice the lemon and the lime (and if you're feeling adventurous, zest the lime as well), putting juice (and zest) in a bowl. To this, add the honey and thoroughly combine.
Dice the apple and add it to the juice while doing so so that it doesn't brown. Add all other ingredients to the bowl and stir to combine. Let sit in fridge for at least 30 minutes for flavors to meld together, then serve!
Serving Size: Makes 4 large servings (for salad topping), or a good dip!
