Honey Lime Salmon

1 1/4 pounds fresh salmon fillet 1 lime1 tsp ground coriander1 tsp ground cumin1/2 tsp salt1/4 tsp ground black pepperSchnucks nonstick cooking spray3 tbsp Schnucks honey3 tbsp chopped fresh cilantro leaves
1. Prepare outdoor grill for direct grilling over medium heat or preheat grill pan 2 minutes over medium high heat before cooking.
2. Pat surface of salmon dry with paper towel. From lime, grate 1 teaspoon peel; cut lime into wedges and set aside. In cup, stir lime peel, coriander, cumin, salt and pepper. Rub top of salmon with spice mixture. Spray top of salmon with nonstick cooking spray.
3. Place salmon, skin side up, on hot grill rack or in grill pan. Cook 8 to 10 minutes or until internal temperature reaches 145°F, turning once halfway through cooking. Brush top of salmon with honey during the last 2 minutes of cooking. Transfer salmon to large plate. Slide spatula between skin and fillet to remove skin. Discard skin. Sprinkle salmon with cilantro. Serve salmon with lime wedges to squeeze on top.
