Kale, mushroom and potato soup

Ingredients
1 tbsp olive oil 1/2 cup chopped onions1 cup sliced crimini mushrooms8 cups water3 cups chopped kale 5 potatoes 1 tbsp kosher salt 1 tsp black pepper
Directions
Saute onions and mushrooms in olive oil in stock pan. Add water, salt and potatoes and bring to boil. When potatoes are almost done add kale. Season.

Serving Size: makes about 6 large bowls of soup.
