Garlic Red Skinned Potatoes

3 redskin potatoes, chopped into squares4 tbsp extra virgin olive oil2 minced garlic cloves2 tbsp parsley (fresh or dried)1 tsp paprikasalt and pepper to season
Cut redskin potatoes into cubes.
Place them on a non-stick pan.
Mix on pan with olive oil, garlic, parsley, paprika, salt, and pepper.
Bake at 350 for 20 minutes. Flip potatoes. Cook for 20 more minutes or until slightly brown.
Makes 6 servings!

I made these with chicken! They were a great side dish, especially when you are tired of leafy vegetables. They are high in flavor and help fill you up! I was worried that they would be TOO garlicy because they were so aromatic, but they were perfect! They were also crispy instead of mushy!Great! - 2/3/08
