Gingery Curry Lentil Soup

1 c. lentils rinsed and sorted3 medium carrots, chopped1 medium onion chopped4-5 cloves of garlic minced3 tsp minced ginger root2 c. organic chicken broth6 c. watersalt and pepper to taste, about a pinch of each works well
Rinse and sort the lentils, set aside. Heat up a large dutch oven with the olive oil. Add the chopped carrots, then the onion, ginger, and last the garlic. Cook until soft and caramelized. Add the curry powder and some salt and pepper to taste. Cook until the spices are toasted and coated with oil. Add the chicken broth and bring to a boil. Add the lentils and the water and cook for 30 minutes or until the lentils are soft.
