Cheap & Easy (slutty?!) Tofu Chili

1 tbsp sunflower or other vegetable oil1 onion, diced3 cloves garlic, minced or pressed350g block of extra firm tofu, grated2 540 mL cans of beans (black beans or red kidney beans, for example)2 800 mL cans of diced tomatoes1 Jalapeno, diced fine3 tbsp chili powder (North American style spice mix)1 tbsp paprika1/2 tsp cayenne (or more)Salt, to taste
Sweat the onion and garlic in the oil over medium high heat. Add tofu, Jalapeno and spices and stir. Add diced tomatoes and beans. Cook until flavours meld, about 10 minutes. Serve with long grain brown rice.
