Kacey's Mediterranean Chicken Salad Spread

1 - 12.5 oz. can - Chunked Chicken Breast - drained 6 - Prunes, dried and chopped fine2 tbsp - Muffuletta (a chopped olive relish)2 tbsp - Pomegranate vinegar2 tsps - Hellmann's Mayonaise1/2 cup - Onions, raw, chopped2/3 cup - Celery, raw, dicedSalt and pepper to taste
In a medium-sized bowl, add drained chicken and mash with a fork until fully separated. Add chopped prunes, Muffuletta, onions and celery and stir until well-blended. Add mayonaise and pomegranate vinegar and mix until all contents are coated. Add salt and pepper to taste. Serve immediately or cover and let stand in the fridge for flavors to meld.
Serve in a slice of toasted gluten-free bread, crackers, or on a bed of lettuce as part of a tasty, crunchy, satisfying meal.
