Quick and Easy Pudding Pie

1 small pkg (0.44 oz.) sugar free gelatin mix (any flavor)1 cup boiling water1/2 cup lime juice (or any type of unsweatened fruit juice)1 cup skim or low fat soy milk1 small pkg (1 oz) sugar and fat free instant pudding mix (any flavor)1/2 cup fat free yogurt1 pre-made reduced fat graham cracker pie crust
Combine gelatin mix and boiling water. Whisk until gelatin is completely dissolved. Add juice and stir. Chill in refrigerator until partially set.
In a separate bowl, combine milk and pudding mix. Whisk until smooth. It should be thick. Add yogurt and stir.
Once gelatin is partially set, spoon both mixtures into pie crust. You can either alternate layers or swirl the gelatin and pudding together using a spatula or blunt knife. Chill until completely set.
Can be topped with fat free whipped topping, meringe, or fruit slices or zest. The flavor varieties are endless by combining different flavors of gelatin, pudding, fruits, juices, and yogurt.
