3 cucumbers, peeled and diced 3 cups cheery tomatoes, cut into halves 1 cup red bell pepper, diced 1 whole lime, squeezed 12 oz chicken 1 cup shredded low fat cheese
Grill chicken. When cooled, chopped into small pieces. Wash, peel, and dice cucumbers. Wash cherry tomatoes and cut into halves. Dice the red bell pepper. Combine all ingredients, including chicken and cheese. Then squeeze lime juice over everything. Add salt and pepper to taste.
