simple gluten/dairy free raisin muffins

Ingredients
Oats, 1 cup, groundquinoa, 1 cup, groundHoney, 1 tbsp Soy Milk, 1 cup Egg, 1 large Almond extract, .5 tsp.Vanilla Extract, 1 tspBaking Powder, 3 tsp Coconut Oil, .25 cup, meltedRaisins, .5 cup (not packed)
Directions
1. Grind your oats and quinoa separately to make a flour. A high speed blender such as a BlendTec makes this very easy.

2. Combine dry ingredients; combine wet ingredients; mix together.

3. Place in oiled muffin tin and bake for 12 minutes at 400 degrees Fahrenheit.

Serving Size: makes 18 mini muffins
