Spam fried rice

3.5 cups white rice cooked (leftover is best from day before!)1 medium onion diced3 small carrots diced1 serving of spam, one serving is plenty3 eggs, beaten1 tbsp soy sauce3 tbsp chicken broth2 medium scallions dicedpinch of saltpinch of black pepperpinch of celery seed1 tsp coriander, ground
Heat a large wok with canola oil.
Stir fry diced carrots, onion and spam with soy sauce Add chicken broth and spices.
Add eggs, beaten. Stir until eggs are fully cooked.
Add the white rice and stir until completely mixed together.
Add the scallions.
