Eggless Tofu Quiche

Ingredients
I block Extra Firm Tofu! Cup Spinach, thawed and drained5 baby bellas washed and chopped1/4 Cup Unsweetened Soy Milk1 Cup Veggie Shreds1/4 Cup chopped bell pepper1/4 tsp mustard1/4 tsp salt [optional]1 tsp corn starch [optional]1 tbsp Earth Balance Buttery Spread, divided1 9 inch deep dish pie panFood processor
Directions
Drain and press the tofu. Butter the pie pan with a little Earth Balance Spread. Sautee the mushrooms and pepper in the rest of the spread. Put the tofu, salt, corn starch, mustard and soy milk in a processor. Blend until it has a smooth creamy texture. Add the thawed drained spinach, mushrooms and peppers and gently mix. Add the Cheese. Pour into the pie pan and bake at 350 for 45 minutes.
