Creamy Mushroom Chicken

1 lb chicken breast1 cup button mushrooms, cut into small pieces1/2 small yellow onion, finely chopped1 tbsp fresh cilantro, finely chopped2 cloves garlic, finely chopped1 tbsp extra virgin olive oil1/4 cup of white wine1 can cream of mushroom soup1 dash of sea salt1 dash of ground white pepper
In a skillet over medium heat warm up olive oil. Add mushrooms, onion, cilantro, and garlic. Cook till mushrooms begin to soften. Place in a bowl and set aside. Season both sides of chicken with salt and pepper and add to skillet presentation side down. Once presentation side has browned, about 15 min, flip chicken, and add white wine to deglaze pan. Cook another 10 min and remove chicken from pan. Add mushroom mixture to pan and stir in cream of mushroom soup. Cook for a few minutes, mixture will be very thick. Add chicken, presentation side up, and spoon mixture on top of chicken for remainder of cooking time, uncovered. Remove from heat and allow chicken to sit uncovered for 15 min before serving.
Serve with white rice, sautéed spinach or asparagus and remainder of white wine.
