Brown & Wild Rice w/Vegetables and Cashew

1 Cup brown & wild rice mixed2 Cups Water2Tbsp. Peanut Oil1/4 cup onion, chopped2/3 cup Cashews 1/2 cup Peas1/2 cup Sweet Corn, Frozen3 medium carrots, sliced 1 cup red cabbage, chopped 2 cup fresh Spinach
Cook rice in water till absorbs all the water, about 30 minutes.
While rice is cooking, slice and chop vegetables. Brown the onion in the peanut oil, add the carrots, cashews, peas, sweet corn, mix in the rice mix then add the cabbage and spinach. Season as desired.
