Bacon Pierogi Bake

1 (16oz pkg) fronzen potato and onion pierogiesCooking Spray4 slices center cut bacon2 garlic cloves, minced1/3 cup 1/3 less fat cream cheese1/2 cup fat free chicken broth1/2 cup shredded sharp cheddar cheese1/4 cup sliced green onions1/4 cup chopped and seeded plum tomato1/2 tea ground black peper
Preheat oven to 400 degrees
Coat 11 x 17 baking dish with cooking spray and arrange pierogies in dish. Cook bacon in pan over medium heat, once cooked remove and drain on paper towels. Pour off drippings from pan, leaving 1 TB. Add garlic to drippings and cook for 30 seconds, stirring constantly. Add cream cheese to pan and cook until cream cheese begins to melt, stirring frequently. Gradually add chicken broth to pan, stirring with a whish until smooth. Pour the cream cheese mixture evenly over pierogies. top with cheddar cheese, Bake for 20 minutes or until bbubbly and thourghly heated. Remove from onion and sprinkle crumbled bacon, onions, tomatoes and pepper over top. Serve
Serving Size: Makes 4 servings + 3 pierogies and 2 TB sauce
