Lentil Dhal

Ingredients
1 tbsp Extra Virgin Olive Oil 1 medium Onion chopped3 cloves Garlic chopped1 cup Potatoes chopped 1/2 cup red lentils rinsed 1/4 tsp Turmeric1/4 tsp Cumin 1/4 tsp Coriander 1/2 tsp Curry powder1/2 tsp salt1/4 tsp black pepper
Directions
In potadd the oil, then onions and garlic, saute until soft, add the potatoes and rinsed lentils, saute for a few minutes, add the spices, blend, slowly add 2 cups water, bring to boil, then turn down to simmer for 20 minutes or until potatoes are soft.
Serve over rice.
