Ingredients
4-6 Patty Pan Squash, thinly sliced, dicedRed Ripe Tomatoes, 1 large, dicedS&W Black Beans in mild jalapeno sauce, 15 oz canScallions, raw, 3 small, choppedSweet Corn, Fresh, 2 ear, kernels removed and roastedAvocado - Add fresh to each servingFor the Dressing:Cilantro, 1/2 cup, mincedLime Juice, 2 tblAgave Nectar, 2 tblOlive Oil, 2 tbl
Directions
Combine squash, tomatoes, black beans, scallions, and sweet corn in a bowl.

Mix dressing ingredients; add to vegetables.

Add chopped avocado to each serving when ready to eat.
