Quick Quiche To-Go Cups, Veggie

2 large eggs4 fresh egg whites1/2 tsp baking powder1/4 cup frozen chopped spinach, well-drained & paper-towel-dried1/4 cup red onion, diced2 tbsp jarred jalapeno peppers, diced1/4 cup 2% reduced fat cheddar cheese, medium or sharpSalt, Pepper & Other Seasonings to taste (I used Salt, Dehyrdated Minced Garlic and Garlic Powder)
1. Preheat oven to 350*F
2. In a small bowl, mix the eggs, egg whites, cheese and baking powder until well blended. Stir in canadian bacon, onion and seasonings
3. In a WELL-GREASED muffin pan (I used a silicone muffin pan), pour mixture evenly to fill 6 muffins worth. Bake 25-30 minutes
Serving Size: Makes 6 quiches
