Faux PO-tato Salad

Ingredients
Cauliflower (3 cups)Greek Yogurt (1/2 cup)Miracle Whip (2 tbsps)Diced Dill Pickles (3/4 cup)Hard boiled Egg (1 cup)Paprika (1 tbsp)Salt & Pepper to taste
Directions
Prepare the cauliflower in your microwave and remove/pat dry any excess water from steaming.

Mix together almost cooled cauliflower with the rest of the ingredients, adjusting spice and portions as you prefer. Use only egg whites if you want an even healthier dish.


Serving Size: This makes 3 servings that would be served in addition to other things or a main course (or a whole meal if you're preparing for a race and need to carb up!)
