Couscous Breakfast Bites

Ingredients
Couscous/quinoa- 2 Cups Cooked (Quinoa is gluten free!) 4 eggs1 Cup shredded carrots1 TBSP minced garlic- give or take to taste1 1/2 Cup shredded cheese 3/4 C chopped meat- bacon, leftovers, lunch meat1/4 C diced onion FOR GLUTEN FREE- USE either GF Couscous or Quinoa. I happened to have had Couscous on hand when I made these. Either one would work the same way
Directions
Cook quinoa/couscous as instructed and set aside to cool a little bit.
Personally- I put the carrots, onion & garlic in the food processor and let it rip. (But I have to 'hide' veggies from my autistic son.)
Then I added it to the cheese and meat in a mixing bowl.
Then, I add my couscous so that the cooler items temper it a little bit.
then add eggs.
Mix by hand and load into prepared muffin tins.
