Nature Valley Granola Thins (copycat)

3c. rolled oats1/2c. shredded coconut3/4c. brown sugar (packed)1c. whole wheat flour1/4c. nuts (I used pecans)1/4c. honey2T. butter (or margarine), melted.1 egg (beaten)1/2c. oil1t. vanilla extractTopping:12oz. semisweet chocolate chips4 T. Peanut butter (I used Adams)
Preheat oven to 350.
Generously grease a half sheet pan (16x11x1).
FInely chop nuts coconut and oats. (Food Process is great just to a fine chop, don't turn it into flour!)
Add flour, oat mix, sugar and salt.
Mix oil, melted butter, and honey.
Add egg and oil mixture to dry mixture and mix very well! (Hands work great)
Press very very hard into the bottom of the pan.
Bake 20-25 minutes, just until edges of granola bars are golden brown. Let cool completely.
Melt chocolate and peanut butter together in the microwave after bars are cool. Spread over the granola bars and let cool completely. Cut into 2" bars. Store in a cool place in an airtight container.
Serving Size: Makes 24- 2" pieces
