Gluten Free Banana Pancakes W/ Cinnamon

1 cup brown rice flour1/2 cup tapioca starch1/4 cup corn starch2 tbsp sugar1 tbsp baking powder1/2 teaspoon xanthan gum1 tsp vanilla1 banana (optional)3 eggs1 cup almond milk (or your preferred milk substitute)1 cup water1 tbsp cinnamon
Blend all dry ingredients together. Add in eggs. Add vanilla and almond milk. Add about half the water and mix well. More water may be needed but your looking for regular pancake consistency. Lumps are normal. Heat skillet to medium heat. Pour batter about a fourth cup at a time. Just like regular pancakes they're ready to flip when they're nice and bubbly.
