Maryland Style (imitation) Crab Cakes

Ingredients
1 package (16 oz) imitation crab meat3 tbsp mayo1 oz lemon juiceShallots, chopped, 4 tbsp1 tbsp & 1 tsp Old Bay seasoning4 eggs, beaten1.5 cups bread crumbs
Directions
place crab meat in large bowl, cut into small pieces
add mayo, eggs, shallots, bay seasoning and lemon juice
Mix well
slowly add bread crumbs, stirring
form into patties (around 8 hamburg sized patties)

Coat a large non-stick frying pan with Pam type spray COAT VERY WELL heat to med DON"T GET TOO HOT

add patties, cook on Med, turning frequently for 5 to 6 minutes until heated through

NOTE: the trick here is to not burn the crab cakes. I used to make these with olive oil, and have switched the recipe to non-stick spray to reduce the calories/fat

    Made cakes according to the recipe, but they tasted rubbery. Modified as follows: 1/4 of the meat was shrimp, the rest imitation crab meat. Used 0.5 cup of fried bread crumbs, and 1 roll of light bread - bulky roll size, a 50 cent grocery store one. It worked great, making them again tomorrow. - 8/23/09

    Excellent. I normally shell king crab for these, but unemployment brings drastic changes. The only change I made was to cut the Old Bay in half to reduce sodium. - 11/21/08

    Even though the recipe left off the amount of breadcrumbs to be used, it was excellent (I used 1 1/2 cups). I also substituted egg beater for real eggs. - 2/3/08

    I didnt have shallots so I used a little finely diced yellow onion as well as green pepper and celery, and added some Parmesan cheese. Only did a half batch but absolutely delicious. Oh yea also used Italian seasoned bread crumbs (its what we had in the cupboard) - 5/31/13
