Chicken Coucous with Fresh Mint and Feta

2 tsp olive oil, extra-virgin 2 cloves garlic, crushed1 1/4 cups reduced-sodium chicken broth 1 cup uncooked couscous 2 cups cooked Chicken breast, (roasted or grilled) 2 medium plum tomatoes, diced 1/4 cup red onion, chopped 1/4 cup fresh mint leaves, chopped 1/3 cup reduced fat feta cheese, crumbled 1 Tbsp cooking Sherry
Heat the oil in a medium saucepan over medium heat. Add the garlic and cook, stirring constantly, until fragrant, about 15 seconds. Stir in the broth; cover and bring to a boil. Stir in the couscous; remove from the heat. Cover and let stand 5 minutes. Fluff the couscous with a fork. Add the chicken, tomatoes, onion, mint, feta cheese, sherry; toss lightly until combined. Serve warm or cold.
