Crustless Spinach Quiche

  • Number of Servings: 6
Ingredients
6 large eggs300 grams 1% cottage cheese100 grams grated cheddar cheese2 tbsp Dijon mustard125 grams Spanish onion1-10oz package frozen spinach1 clove minced garlic1/4 tsp black pepper or to taste
Directions
Combine eggs, cheeses, mustard and pepper.
Saute' garlic, onion and frozen spinach until all excess moisture from spinach evaporates. Add to egg mixture.
Pour into 10" pie plate. Make sure mixture is well blended. Makes 6 generous pieces.
Bake in 325*F oven for 1 hour or until set.

    I make this all the time now. Got the recipe on Recipezaar website. Only that site uses only egg whites which is much better for cholesterol count and only 4 tbl of parmesan instead of the cheddar. I skip the mustard, but add a bunch of baby bella sliced mushrooms and it's great for breakfast - 1/25/09

    used 1 whole egg then egg whites (could also use egg sub to lower the cholesterol and fat), reduced fat cheese, used one shallot instead of onions, no mustard and added mushrooms I cooked in the pan as well, and a pinch of cayenne instead of pepper. Zucchini next :) - 1/30/12

    I love this. I just made it. Split it up into 2 pie tins and used malawach on the bottom for crust. For this works really well for me that it is higher in protein too. - 3/30/11

    Egg whites instead of whole eggs - beat whites into soft peaks and fold in. Add a whole grain such as cooked oat groats. Add (drained) pinto or great northern beans. Add parsley. Add seasonal vegies (eg asparagus or peas). Dino kale instead of spinach. Skip the cheeses. - 5/29/09

    I love spinach quiches, and this sounds like a good one. Also-- altho I hate to change a recipe before I try it, I suppose I could exchange some grated, drained zucchini for half the spinach. Spinach is very high in Vit K -- a no-no for DH right now because of a medication. It's worth a try. - 5/29/09

    Very good! I used quark which is a German version of cottage cheese without the lumps, similar to ricotta. I also added a pinch of nutmeg. The leftovers will make good take-along lunches - maybe I'll even have some for breakfast! - 5/17/09
