2 c. unbleached flour1 c. brown sugar1/4 c. sugar3 tsp. baking pwd.1 tsp. salt1/2 tsp. baking soda1 1/2 tsp. vanilla1/2 c. coconut oil1 1/4 c. whole milk3 eggs1 c. Ghirardelli 60% cacao bittersweet chocolate chipsGlaze:1 c. chocolate chips4 Tbsp. butter2 Tbsp. agave1 tsp mint extract2-3 drops of peppermint essential oil
Heat oven to 350 degrees. Grease & flour bundt pan. Measure all ingredients into large mixer. Blend 1/2 min. at low speed, beat 2 min. at high speed. Pour into pan & bake 35-40 minutes, until toothpick comes out clean.
For Glaze:
Melt all graze ingredients over low heat, stirring constantly. Cool slightly & then drizzle over cake.
