Low Fat Fettucini Alfredo

Ingredients
10 oz Cooked Fettucini2 Chicken breasts, cubed and cooked in olive oil1.5 cups broccoliSauce:1.5 cups Low-fat Chicken broth.5 cup low-fat cream cheese4 tbsp flour5 tbsp grated Parmesan cheese, separated1 tsp black pepper
Directions
Cook Fettucini noodles according to package directions.
Cube 2 chicken breasts and cook in 1 tbsp olive oil.
Cook 1.5 cup of broccoli

For Sauce:
Combine in a saucepan, chicken broth, cream cheese, flour, 4 tbsp parmesan cheese, and black pepper. Stir continuously until reach boiling. Remove from heat and let thicken.

Combine all ingredients with sauce mixture, toss and serve.

top with remaing 1 tbsp Parmesan cheese

Makes approx. 4 2-cup servings.

    Sorry but this was not good... we ordered pizza. The sauce was pasty and tasted like cream cheese with flour. I know how to cook and it's not like I messed up the recipe. I like my good old fashioned recipe. It may not be healthy but it sure does taste a lot better. No substitute for this! - 8/5/10

    I've not made this but I can see why one comment said it was pasty and had a taste of flour. When you add flour to something you generally make a roux with it and cook it with a fat such as butter first. You might have better luck making a béchamel with a lower fat milk and using low fat cheese - 3/23/11
