2lb 4oz ground beef (lean)1 stalk of celery finely grated1.5 large onions finely grated2 large eggs beaten1/4 cup ketchup4 tsp mustard (brown mustard is good)1.5 slices white bread crumbs freshly madedash of saltdash of black pepper1/3 cup skim milk
Mix the grated celery, onions, bread crumbs and milk in one large bowl. Mix the ketchup, mustard, eggs, salt and pepper in a separate bowl until well combined. Combine the two bowls together with the ground beef until just blended, do not overmix. Put all of the ingredients into a loaf pan and pat down until evenly dispersed. Place in 400 degree oven for 50 minutes. Let sit for 15 to 20 minutes before serving.
