Raw Harvest Nut Stuffing

2 cloves of garlic2 Tablespoons fresh sage2 Tablespoons fresh rosemary2 Tablespoons fresh thyme2 cups walnuts, soaked 12 hours in advance, drained 2 cups almonds, soaked 12 hours in advance, drained1 Tablespoon white miso1 onion6 stalks of celery1 cup fresh parsley
Process garlic and herbs. Add nuts and miso about a third at a time, and process until a little smoother than crumbly, but not to the point of nut butter. Put in a bowl, stir in the onion and celery. At this point I ran it through the processor again, about half at a time. Then crumble the mixture onto a teflex sheet and dehydrate at 105 degrees for 6 hours.
