Lower Sugar Oatmeal Chocolate Chip Cookies

1 tb vanilla extract3/4 c brown sugar, packed1/2 cup sugar or stevia equivalent1 cup butter, or 1/2 butter and 1/2 unsweetened applesauce (melt butter)1 egg2 1/4 c flour - (I used half wheat half white)1 cup uncooked oats1 tsp baking soda1/2 tsp salt12 oz carob or chocolate chips
Mix sugars, butter and/or applesauce, egg and vanilla.
Stir in flour, baking soda and salt.
Stir in oats and chocolate or carob.
Drop rounded tablespoon on foiled cookie sheet. Bake 8-10 minutes in a preheated oven at 375 degrees.
Serving Size: 3.5-4 dozen cookies, using a rounded tablespoon
