Tomato Tofu Masala

Ingredients
1 tbsp Olive Oil1 tbsp crushed garlic1 tbsp sliced, chopped or shredded ginger (or ginger paste)1/4 C chopped onion1 can crushed tomatoes1/2 can tomato paste1 C half and half creamCumin, groundCoriander, groundTurmeric, ground1 C diced firm tofu
Directions
In large sauce pan, heat oil on med-low. Saute garlic & ginger. Add onions and saute. When onions are clear-ish, add crushed tomato & tomato paste. Stir occassionally and let flavors combine over med-low heat. Add spices (make sure they're ground) to taste. Slowly add cream & stir it in. Add tofu.
