Banana Oatmeal & Bran MuffinsNumber of Servings: 12Ingredients 1 cup whole oatmeal 54g carb - 8 (diet fiber) = 46/12 servings = 4g carbs per muffin˝ cup bran flakes 18g carb – 2.5 (diet fiber) = 15.5/12 servings= 1.3g carbs per muffin3 tsp baking powder 1/2 tsp baking soda4 tsp cinnamon3 tsp nutmeg3 tsp vanilla2 TBSP Torani Sugar Free Syrup flavors (Both Pumpkin Pie Spice, Vanilla or French Vanilla work well and have zero carbs! ). 2 TBSP Splenda Brown Sugar Blend 32g carbs/12 servings = 2.666667 = 3g carbs(1 TBSP is 8g carbs)2 eggs = 2g carbs/12 servings = 0.2g carbs per muffin4 oz unsweetened applesauce 12g carbs – 2g diet fiber= 10g/12 servings = 0.8g carbs per muffin2 small/medium bananas (total 6 oz) 22.5g carbs – 6g dietary fiber = 16.5g/12 servings = 1.4g per muffin
Preheat oven to 375F. In one large mixing bowl. Mix applesauce, vanilla, spices, Sugar Free Torani Syrup, eggs and mashed bananas together. In a separate bowl combine together all the dry ingredients. Fold in the dry ingredients into the banana mixture until well blended then let mixture rest for five minutes. Spoon mixture into 12 prepared muffin cups (use non-stick canola spray or Pam).
Bake for 12-18 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.
