Our Rustic Apple Tart

Ingredients
0.5 c whole wheat flour1 c white flour.5 t salt10T butter3 to 6 T water6 medium apples (a mix of varieties is super).25 c sugar1 T cinnamon
Directions
Mix flours and salt. Crumble in the butter. Slowly add tablespoons of water until the dough holds together. Lightly work dough by smearing it sideways with the heel of your palm. Fold and smear (this is fressage in French and doesn't that sound more elegant!) about 4 times. Chill dough.
Peel apples, core, and cut into thick slices. Sprinkle with sugar and cinnamon. (Save a pinch of sugar to sprinkle on finished tart.)
Working on a well floured mat or pastry cloth, roll out chilled dough to 12 by 16 oblong. Chill a bit if it's gotten warm.
Bring out the dough, pile on the apple mix. Leave an 1.5 inch border and fold that up onto apples. Sprinkle the reserved sugar. Chill briefly (4 minutes or so) and then put in a 425 degree oven. Cook until brown and apples are soft with bubbly hot juice. This varies from 30 to 45 minutes depending on the apples.
