Crock Pot Chicken Mole

1 large white onion, chopped3 cloves garlic, chopped1 finely chopped chipotle chile in adobo sauce3 tbsp peanut butter1-28 oz. can crushed tomatoes1 tsp stevia1 tsp ground cinnamon4 tsp chili powder1 tsp ground cumin3 tbsp unsweetened cocoa powder1/4 cup cilantro, chopped1 1/2 lbs skinless, boneless chicken breasts
Add your onion, garlic, chipotle pepper, peanut butter and crushed tomatoes into a slow cooker.
Stir in the stevia, cinnamon, chili powder, cumin, nutmeg, cocoa powder and cilantro.
Place the chicken in the sauce making sure to cover entirely.
Cook on high until chicken is tender, about 3 - 4 hours.
When cooked, shred the meat. Stir the shredded meat back into the sauce and serve with tortillas or in a salad.
