Broiled Chicken with Apples

Ingredients
2 medium boneless, skinless chicken breasts1 tbsp olive oil1 red onion, thinly sliced1 medium apple, cored & thinly sliced2 tbsp balsamic vinegar1 tsp honey1/4 tsp ground gingersalt & pepper to taste
Directions
1. Heat broiler.
2. Heat oil in large skillet over medium heat, add onion. Cook, stirring until onion softens.
3. Add apple, vinegar, honey & ginger. Cook, stirring frequently, until apple slices soften & onions carmelize, about 10 minutes.
4. Meanwhile, season the chicken to taste with salt & pepper, place on broiler pan. Cook until cooked through, about 12 minutes.
5. Cut chicken lengthwise into slices, transfer to plates.
6. Top with apple-onion mixture.
